It's time to buckle down and get ready for a very hard weekend of partying and food!!!
I have tomorrow off from work, so I will get up early, walk an hour and bike an hour. I will stay busy throughout the day, maybe doing some Kayaking, and then at night, I will be going to the Full Moon Party to celebrate Sandy's birthdy for alot of dancing on the beach and sweating like crazy!!! I don't need drinks, so I will stick to good ole fashion water.
Saturday, I will be celebrating my mom's 85th Birthday, so there will be alot of goodies around. I will mainly try to stick to the healthy stuff and maybe just tasting the special goodies. I haven't touched my extra 35 points, so I should be able to do well.
Sunday and Monday are free days, so I expect to get in some morning and some afternoon exercise. I will try to barbecue and stick to the plan.
I am on a mission and it CANNOT fail. My weigh in will be on Tuesday, since Monday is Memorial Day. I expect to see a number lower than 159.1 =)

With Memorial weekend on the horizon, here's a 2 point recipe that will have you thinking that you've cheated. Stay Strong, and don't forget if you over eat just a tad that's okay, just work out a little bit harder that's what outdoor weekends are all about. This Cheesy Twice Baked Potatoes Recipe is a great idea to serve as a low calorie appetizer recipe or even as a low points side recipe. Each one has just a 2 Point Total, and is a great low calorie snack idea too! Enjoy!
Cheesy Twice Baked Potatoes Recipe
Ingredients:
- 2 large Idaho potatoes (approx 1 lb)
- 1/4 cup fat-free sour cream
- 1/4 cup crumbled blue cheese
- 1 tsp chopped fresh parsley
- 2 green onion stalks, finely chopped
- salt and pepper to taste
- non-fat cooking spray, Butter Flavored
- top with Bacon Bits and chives (optional)
Directions:
Preheat oven to 400ºF. Pierce potatoes with fork. Bake until tender, 45-50 minutes. Remove from oven; let stand until cool enough to handle. Cut potatoes lengthwise. With spoon, scoop out potato pulp, forming 4 shells. Place pulp in bowl; add sour cream, blue cheese, green onions, salt & pepper and parsley. With potato masher, blend until smooth. Spritz potato shells with a bit of butter flavored, non-fat cooking spray, and then sprinkle with a bit of salt and pepper. Smooth potato mixture into shells. Place on baking sheet and bake until heated through, 15 minutes
Entire recipe makes 4 servings
Each serving = 2 Point Total
